No-Bake Chocolate Cookies

When I need a chocolate fix…this is often what I turn to. The amount of time you boil the mixture is dependant on your altitude…every time we’ve moved to another state I’ve had to reevaluate. It can be anywhere from 3-5 minutes. You may have to play with it a little, but these are SO GOOD. Some people add peanut butter to these, but I love the pure chocolate flavor here.

2 c. sugar
1/2 c. milk
1/2 c. butter
3 T. cocoa powder
1 t. salt
3 c. quick cooking oats, raw
1 t. vanilla
1/2 c. broken walnuts (optional)
1 c. coconut (optional)

Put the sugar, milk, cocoa, butter and salt in a large saucepan and bring to a boil. Boil for approximately 4 minutes (if you don't boil long enough the cookies won't set - too long and they won't stick together). Remove from heat and quickly stir in the oats, vanilla, nuts and coconut. Drop by tablespoonfuls onto waxed paper.
