Parmesan-Crusted Cauliflower

From Robin Miller. How can something so white taste so wonderful? It's called Parmesan cheese! We go through tons of the stuff in my house and vegetables are no exception. In this dish, I parboil the cauliflower
first to get a jump-start on the cooking time. Not a cauliflower fan? This coating works with virtually all vegetables.

Olive oil cooking spray
6 cups cauliflower florets
1/2 cup grated Parmesan cheese, preferably freshly grated
Freshly ground black pepper

Preheat the oven to 400°F. Coat a large baking sheet with cooking spray.

Bring a medium pot of water to a boil. Add the cauliflower and cook for 1 minute. Drain and transfer the cauliflower to the prepared baking sheet. Spray the cauliflower with cooking spray, then sprinkle with the Parmesan and season with pepper. Bake until the cheese is golden brown, about 10 minutes.
