Lemon Bread
From the McOmber “Mom’s Pies & Goodies” Bakery – Yum!! We loved visiting Mark’s parents when they were running this bakery…so many fabulous things to eat, and this bread was a FAVE!
Mix:
3 eggs
1 ½ c. milk
1 ½ tsp vanilla
a touch of yellow food coloring
1 ½ c. oil
2 Tbsp lemon extract (by the spices)
Mix:
2 ¼ c. flour
2 c. sugar
1 ½ tsp salt
1 ½ tsp baking powder
Glaze:
almost ½ c. lemon juice (3/8 cup)
1 ½ c. powdered sugar
¾ tsp vanilla
Use a nonstick spray on the bread pan and fill leaving about 1 ½ inches of space at top. Bake at 325 for about 45 minutes. Test with a toothpick to see if done. Remove from oven and poke bread all over with a long fork then slosh on lots of glaze with a pastry brush. Cool in the pan until top of bread is dry. Bang the sides then remove the bread.
