Pasta Con Asiago E Spinaci (Pasta with Cheese & Spinach)

This is a McOmber family favorite we love making for company! It’s SO good but also easy to make!

10 oz. fresh spinach, tom into small pieces
1/2 lb. Asiago or Fontina cheese, shredded
5 oz. oil-packed sun-dried tomatoes , drained, sliced in half
1/4 cup extra virgin olive oil
3 cloves garlic, minced
1/4 tsp pepper
3/4 lb. cavatappi or other short pasta, such as fusilli or rotini
1/4 cup freshly grated parmesan
1/4 cup toasted pine nuts

In large serving bowl, combine spinach, Asiago, sun-dried tomatoes, olive oil, garlic and pepper. Toss to combine. Set aside. Cook pasta according to package directions. Drain pasta and add to serving bowl. Toss pasta with spinach and cheese mixture. Add parmesan and combine. Sprinkle with pine nuts.
